Una de las m\u00e1s grandes joyas de la gastronom\u00eda coste\u00f1a es, sin duda alguna, el bollo de yuca: un acompa\u00f1ante de lujo para la mayor\u00eda de nuestros m\u00e1s aut\u00f3ctonos y deliciosos platos. Yo lo elevo a la categor\u00eda de \u201cmanjar\u201d cuando alcanza ese punto de moho que lo hace igual de ex\u00f3tico que el queso roquefort o que el fuet catal\u00e1n. Sin embargo, en los \u00faltimos meses he notado que el bollo de yuca ya no se pone mohoso. Lo compro y lo dejo madurar un par de d\u00edas y, en vez de que le aparezca esa tan exquisita capa anaranjada, lo que sucede es que se pone duro como un tronco, impenetrable por cualquier tipo de cuchillo o sierra. No s\u00e9 qu\u00e9 ha cambiado en su proceso de elaboraci\u00f3n, pero creo que es hora de que le pongamos la lupa al tema. No puede ser que por hacer m\u00e1s rentable el negocio echemos a la basura tantos a\u00f1os de tradici\u00f3n y perdamos, a su vez, uno de nuestros sellos de identidad y el bocado m\u00e1s portentoso que esta tierra le ha regalado a nuestros paladares.<\/p>\n","protected":false},"excerpt":{"rendered":"
